A smoker is on my wish list. I cook my turkey in a dutch oven, and it is pretty good that way, but smoked turkey is so good. 

We have two smoker/bbq units. I want to build a cabinet unit and hook it up with dryer vent tubing to make a cold smoker for loks and cheeses too.

Good luck SC! My thermostat has been all over the place. We have had to watch it like a hawk. I have a new TSC1000 coming today. If I don't electrocute myself setting it up we should be in business. My eggs were 75 degrees on one occasion and 80 on another. Frustrating.
