Shipping chicks

So can chickens only be shipped right after they hatch because they absorb the yolk sac? Or can you still ship them after the three days after they hatch? I saw some laying hens someone was shipping. can you do that?

It says they have to ship without food, so how is everyone able to ship with fruit and veggies?
