Should I switch to layer feed? I have one Roo

Finally, I'd like to have organic eggs, is this really possible using store bought feed?

Your eggs aren't going to be certified organic if any of the feed/snacks you've offered isn't organic, or if the land they're housed on/forage on isn't organic. But if your aim is "organic enough" for your own usage, then that's up to you how closely you want to follow organic practices.
 
Yeah, I agree with NatJ. I feed a Non-Medicated Starter-Grower feed 18% to my 5 Pullets and 3 Hens year round with Oyster Shells separately.

If you feed Crumbles it's cheaper than an All-Flock feed. I don't have any Cockerels/Roosters.
Of course if you are raising Ducks an All-Flock/Flock Raiser or Duck feed is the way to go.
My chickens get through molt just fine with 18% Protein. Curly on December 5 below.

I also give them Scratch Grains twice daily scattered in their pen. 1 Tbsp per chicken daily, 2 Tbsp daily during winter season.
