Showing chickens...

Conditioning came from years of experience conditioning horses. A lot of other came from trial and error, asking others, observing how winning birds are groomed, and being a little bit picky about wanting a bird I show to look as good as it possibly can.

I would have to say that would be to different situations. The Cochin is a recognized breed and it is the variety that is not recognized for Cochin. As for the Seramas there not a recognized breed so yes they could get a Best of Variety ( BoV ) and a Best of Breed ( BoB ).
Just like with the Plymouth Rocks Breed there is no Black or Splash variety in the Standard so when shown they will only get a BoV or lets say there was a working Standard in the U.S. for American Game Breed you could show them and get a BoV and a BoB because they are not a breed recognized in the Standard.

Honestly, I think Seramas are treated differently at shows that other breeds, and have been since the times when they were shown and judged on tabletops.

I don't know why you'd get a BB frankly, I am not a judge. And I dont' understand how Serama stuff works. So can't really speak to that issue. But in all other breeds that are accepted by the ABA/APA, if you have a variety that has not been accepted into the Standard, you may not win BB with it.
