Pipsqueak is getting there, she wakes up occasionally and her poop is looking more normal, but it's pretty slow progress. I know it will take long but how long does it usually take for a quail to recover from this?

It's hard to say without knowing exactly what is/was wrong. She might get better in a couple of days or it might take a couple of weeks. The longer she was weak and sick, the longer it will take to recover.
