Skinning vs Scalding

I skinned my last two roosters. I used the air hose to blow the skin up like a balloon and I still found it hard to skin them. I think it takes up just as much time to skin as it does to pluck.

I "processed" two extra roosters I had a week ago. I skinned them and think I will continue that way. Helpful hint I found mid-way through the process is to make sure your work table is not downwind of your skinning area.
