I do have a pullet that was being severely bullied, and was too afraid to leave the coop. Could stress cause issues?

It's hollow because they ate the contents.

Not uncommon for new layers to have a few soft eggs, and yes stress can cause issues as well.

I agree, being a new layer and stress both can cause all sorts of weird egg issues. I wouldn't worry unless it continues to happen.
