The ducks would go behind the coop as I was spraying it out and piddle in the water I have chased them away so much but the hear the water running and they come running but... the other day I put wheat straw down which my hubby does not like but I was a wet mess I thought maybe it would at least keep the ducks from playing in the water/waste

Do the ducks have a pool or pond? If they had someplace appropriate to play in the water they'd probably be more likely to leave you to your cleaning also, have you tried using a putty knife to scrape the poo off instead of hosing it? I feel like that would cut down on the smell, like someone else mentioned, wet=smelly. Maybe some removable boards you could pull out to hose down once a week or so, and just scrape daily?

Yes ducks have 4 swimming pools to play in so there is plenty of other water for them to play in clean water

There is sheet metal.on the floor of the chicken coop so the ducks aren't constantly getting pooped on so today we have been working on a couple doors in the front that flip up so I can take the metal out to have better access to cleaning it this is a work in.progress we are learning as we go

Well then. Goofy ducks sounds like you've got a good handle on making cleaning easier. And the metal probably is even easier to clean than a board and won't hold smell.
I know what you mean by learning as you go! I'm in the same boat, but it's just do much fun! Annoyances and all

I water the bottom of my coop down every morning, the underneath that is, and it's sand so it drains nicely, and I do it because it's hot! Today was 105, the sand dries quickly and the girls lay in it to cool off. It seems to help

If you have a solid floor in the chicken coop above, put some pine shavings in there to help absorb the moisture from the chicken droppings.
You can replace the shavings as necessary, time will tell how often that is.

In the duck enclosure below some shavings in there might help too(I've never had ducks)....
......but keep all the duck water out of the enclosure altogether if possible, but especially the pond.

Using water to clean, especially in your humid environment, is only going to increase the odors.
It's been humid as heck here the last week or so, and hot, the odors are much harder to keep down when it's humid.
I add dry organic matter(dry grass clippings raked up off the lawn areas couple days after mowing..or some straw) to the run when it gets stinky, works very well.
