Sorry, another processing question

Just did a batch of 20 last month. If you have the space, let them sit in the fridge for a day prior to packaging. It will let the muscles relax (rigor) PLUS, getting them partially chilled will not put as much stress on your freezer.
 
To get the legs "neat" to the side, you'll have to truss them to let them keep shape as they go through rigor. You can either use the excess skin at the "belly", or you can use butchers twine and tie them down. Otherwise, gravity does it's trick and they go the path of least resistance
