Mixing two breeds creates a mixed breed.Something like a mule is an interspecific hybrid. But when separate genetic strains of the same species are crossed, it’s also called a hybrid. I know it’s confusing, but that’s basic animal and plant breeding terminology. Usually in that context “hybrid” implies that two purebred strains are used, while “mixed-breed” can be less specific about the genetics of the parents.
