Spaetzle recipe

Moodlymoo... have you ever had Zerrissen Hosen?? Aka, torn pants?? It's a sweet dough that you fry. So good. One of my family's favorite. My Oma use to make it, and my mom and now me.

JK! I love the German sandwich meat, and it's so hard to find. Whenever I go to Crystal Lake, Il, I go and stock up. There's an awesome German deli there.

I make spaetzle quite frequently (dad was of German heritage) and I make it basically using the same recipe as posted. But 2 things I make sure I do....when mixing the flour, eggs and water, I use a wooden spoon and beat it until the batter "bubbles" (you'll recognize it when you see it) and also I use the traditional way of cooking the spaetzle.

No need for expensive ricers or spaetzle makers, just take a wooden cutting board, rinse it with cold water, plop some batter on it, hold the board alongside your pot of boiling water, and with a butter knife slide off pieces of the batter into the water. When the noodles float, they are cooked and ready to take out of the water. I keep them in a warm skillet with lot's of melted butter until all the spaetzle is cooked.
 
hahaha, I had a garage sale to fund my coop building experience and boy Im glad I did. That thing cost 27x what I budgeted. We are still eating ramen jk
