FYI, chickens love, LOVE lobster roe. I'm a caterer and just gave my girls the roe from a couple dozen lobsters and they almost took off my fingers pecking so furiously.

Living in the AZ desert I too would almost pick your fingers off for fresh lobster....

You should check your supplier. Most areas it is illegal to take lobster with roe.

Though why a caterer should be feeding lobster coral to her chickens and not as part of a compound butter to her clients is beyond me. In the right hands, coral and tomalley are the best parts.
