Spin off: How do you cook your duck?

I'm agreeing with goat-walker... I understand that people raise ducks for meat, but honestly, a lot of people do things that I prefer to not think about. my duckies are for petting, and feeding treats to, and ways to cook things will be better appreciated in the recipe place. No offense intended.

If some people are offended by eating ducks or whatever... why would they read a thread on how to "cook" duck?

Meat animals are not bonded to, made pets out of or named in general although many people have named their steers or hogs names like T-Bone and Pork Chop.
Field raised ducks are very wild and not pet like.
While the reality of eating meat is not a fun thing to think about most of us consume meat and butchering your own is a generally a much kinder way to process them.

For those of you who have never tried duck meat you might want to try Muscovy Duck which is lower in fat than turkey and very tasting according to alot of people.​
 
Forgot my recipe!

Try this...
Cut off excess fat, remove and pin feathers, rinse off and pat dry a whole duck or chicken carcass with skin on.
Salt & pepper inside cavity.
Cut up 1-2 fresh lemons into quarters and stuff
into cavity. I have used limes as well.
Tie legs together with some butcher string.
Rub some melted butter on outside of bird and salt & pepper.
Grease pan with some olive oil and set bird on top of 1 large diced up onion.
Depending on size of bird, roast in oven around 1 hour - 1¼ hours at 425º until juices run clear when you cut between the leg and thigh...or 180º with a meat thermometer.
The onions will burn but still taste good believe it or not.
Let the bird rest 15 minutes before cutting.
You will not believe how juicy, tender and delicious it will taste!

Seriously though, we name most all our birds and they will all be eaten at some point. We treat them no different than our animals we don't eat. We love them and give them an awesome life as a pet until it is time for them to serve a greater purpose. My kids love to name meat animals things like "Chicken Soup, Chicken Nugget, Drumsticks...etc...stuff like that. We ate a chicken named Betsy just the other day and she was DELISH!

I love my duck roasted in orange marmalade/whole mustard sauce. it is SOOOOOOO flipping good!!

We're raising about 5 ducks now that are bound for the freezer. Just a couple months to go. Until then, they're livin' the good life!
