Does anyone have one of the small pressure cookers for making meals for two? I am seriously considering it. I love stews, soups, and things that use cheaper cuts of meat that require a long cooking time. I made chicken once in my BIG pressure cooker and it was delicious! Just way too big to drag out and clean.

I have two fagor pressure cookers. One is an 8QT and the bigger one is a 10QT. I used the8QT to cook the bread pudding. it is the perfect size for a 1.5QT souffle pan to fit in. It is a good size for stock and soups. The bigger is good for bigger pot roasts and larger batches of Stew.

The Fagor Pressure cookers are very easy to use and to get replacement parts.

Yes and it was very tasty. My Youngest finished eating the last of it this Afternoon.

Last night I used the 8QT cooker to pressure cook a Cockerel and then cleaned it up and cooked the Chocolate Bread Pudding. I am about to pressure cook the bones to make Broth and will make soup using the Stock and left over meat.
That is three uses in two days. I get a lot of use out of my Pressure cookers.

is there any particular benefit to pressure-cooking to make stock vsw. just regular pot on a stove, other than it taking less time?

I pulls more flavor out of the bones.

It uses less energy too so Pressure Cookers are eco friendly.

At it has more scent modernist cusine says all wonderful cooking smells are flavors escaping to your cooking. They love them some pressure cookers.
 
Speaking of wonderful cooking smells I couldn't resist and put a cherry pie (non-fancy) in the oven. OMG, and I have to wait to cut it for hours.

Or not.
