I candled my Icelandic eggs again. Better results, 13 with veins, but two of the smaller eggs had blood rings also. So 11 are good.

I had shrimp last night too! Costco had HUGE shrimp for sale when I was there on Friday. I breaded them with panko and fried them. I was leaning towards garlic scampi, but DH wanted fried. I ate three and thought I would die, LOL



For breakfast this morning, I'm trying a recipe I cut out of the paper. You just use refrigerator crescent rolls for the dough, add a cream cheese mixture middle and some jam, then a drizzle of glaze. Cheese Danish in about fifteen minutes. What could be easier?

Well, it's never going to be the same as making homemade dough, but it was amazingly simple and good for a last minute throw together.

(I halved the recipe, so double everything if you need more rolls)

Basically it was take an 8 count roll of crescent rolls and divide into 4 rectangles. Pinch/seal the diagonal line in each. Spread each with melted butter and sprinkle with 1 Tbsp. of brown sugar. Roll up the long edge and make a coil on parchment. Take 4 oz cream cheese softened, mix with 2 Tbsp. sugar and 1 Tsp. vanilla. Make a depression in each round and divide the cheese mixture between them. Top with 1 Tsp. jam (I used homemade apricot). Bake at 350 for 15 minutes. Make a glaze with 1/4 cup conf. sugar and a few Tsp. of orange juice. Drizzle over the rolls.

They were actually quite tasty. I never even bothered to measure anything, just eyeballed it. You could adjust anything you want, add cinnamon, raisins, etc.

For two days I have been working on duplicating a garlic pizza that we love from Pizza Classico. I finally got really close and we loved it. The crust recipe makes two pizzas so the chickens have eaten pizza two day in a row. They go into a frenzy for it! Garlic chives are blooming in my garden so I used them to add some color. I thought it brought out the purple of the onions.

Last year we broke up a Rats nest and were able to smash a couple of them. We dropped them over the fence to the layer flock and the next day, we could not even find the bones. The pizza looks a lot better. Great pictures!

Stella is slacking in her moderator duties for letting this one by! I guess she was busy eating pizza.

 
Halibut is a great tasting fish, along with Red Snapper.

Alaskan Salmon is wonderful! I used to go fishing for Steal head trout in the Sacramento river. They are very tasty too.

Sadly my Daughters think they will die if I cook fish.

Start them on sushi! Sounds crazy but that is how mario got me to eat fish. He still has to stay away from mackerel while im here he eats it when im on site and the dog and cat feast.

We have been using upright plastic feed buckets to trap mice. Got about 10 little ones this week. The chicken go crazy for them. Turkys too there is running involved!
