@Happy Chooks if you don't mind a suggestion, keep a damp rag handy while you are working the honey to wipe the honey knife on while you are taking breaks. I see how it has some dark streaks on it from sitting too long hot and unused. You can plunge it into the cappings to cool it, or if you don't have enough capping yet take a damp rag folded several times in your hand and wipe the blade clean. It will leave permanent marks on your honey knife and make the room smell like burnt honey and wax if you don't keep it clean.
I also like to plug my knife into a power strip that has a switch and lay the power strip on the floor, so I can flip it off with a quick step of the foot when my hands are sticky and I know it will be a while before I need it again, like while I'm spinning honey.
