Woohoo for the squeaky wheel getting the grease!!

Well I took the $500 because he said it was either that or they were flying in tomorrow to buy $500 worth of eggs from me. So, since I have only gotten three eggs since we moved here, I had to take the money. They are also creating a link on their website to enable people with problems like I had to escalate their complaint to the president of the company!
 
New oven/microwave just arrived! All in one piece this time! VP of sales found out about my negative post about my experience has he intervened to make this happen. So far he has offered me $500 refund in compensation for the problems but I haven't accepted it.

Work starts on the house again this morning. I am hoping that the drywall texturing in the kitchen gets done so my cabinet guy can start the refacing. Scheduling is critical at this point. Can't install countertops without cabinet facings being done. We don't need the drawers and doors, but we at least need the refacing of the boxes done. Plus, my cabinet guy is building up that huge section of countertop that was eight inches lower than the others. That will be great as I will have more countertop for prep without bending way over and also a new bank of drawers! I can never have too many drawers! A girl needs her junk drawers you know. :)

Johnny will see my tile choices this morning. I am curious as to how he responds. He has been perplexed by some of my choices so far. Michael and I taped up some tiles on the backsplash so we could check them out when we are in the house doing laundry and stuff. We really like it. We love the tile I chose for the fireplace surround too!

The money I have going out is scary. I will be glad when all the buying is done and all I will have left are the labor charges for the subs. I still need to pick up a couple of toilets. I will know what else I need in the bathrooms after demo starts in there. The little half bath is pretty much being left as-is except the light switch is being moved to the opposite wall. Right now you have to go up a couple of steps to the bathroom, find your way in the dark, close the door behind you and feel for the light switch on the wall behind the door. The door has to be completely shut to get to it. Who does that?

We are expecting hot weather again today, peaking out at 104 tomorrow! A little end-of-summer slap in the face for California! I have some grapes in the freezer for the girls. The Isbar has her work cut out for her if those guys from BUILD fly in for eggs!
 
Just noticed that my new oven has a setting for "chicken nuggets!" WTH? I haven't had a chicken nugget in 20 years!


I have a recipe for chicken nuggets--no microwave involved though...

Chicken Nuggets

Total Time: 15 min
Prep: 5 min
Cook: 10 min

Yield: 2 to 4 servings


Ingredients

1 cup all-purpose flour
1 tablespoon seasoned salt
Salt and freshly ground black pepper
2 large eggs
2 cup seasoned breadcrumbs
2 chicken breasts, cut into small pieces
Vegetable oil, for frying
Ketchup, for serving

Directions

In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.

Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.

Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.
 
I think the nugget setting is just for re-heating them. I doubt I'll be using it unless I find something else it works perfectly for. I am, however, psyched you the popcorn button. can't survive without that one!

I am quite tired of this motor home and looking forward to moving back into the house. Thank goodness we had it because I cannot imagine living in the house during the remodel.
