I stopped at a farmers market yesterday and was thrilled to score a big batch of goat's milk cheese. Two flavored soft cheeses, one cumin lime and one mushroom leek. Then a pack each of Feta and a dry cheese something like Parmesan.

I asked him what kind of goats he had. He said " No no, it's what kind of goats we DON'T have" :lau. (The answer was fainting goats)

My kitchen is a mess, but I got 2 batches of salsa in the water bath canner right now. I spoiled myself by making homemade salsa, and now I don't like the taste of the store bought stuff. I had extra tomatoes, peppers, etc, so today is salsa day.
 
Kelly, once you add other ingredients to high-acid tomatoes the acid level usually drops to where pressure canning is necessary, or do you use a recipe that adds acid?
Yes, the recipe I use calls for a cup of vinegar. I've used it in the past and I really like the flavor. Plus, you don't have to peel the tomatoes.
