I am out of commission today. I tripped on a tie-down strap used to keep the hay bin from falling apart. I didn't realize it was too long so the extra part of the strap was on the ground covered with hay. It got caught around my foot, and I kept walking not knowing it. When I got to the end of the line I took a hard face plant onto the ground. Wracked up my knee, my back and an elbow. Sutures didn't rip out thank goodness. I'll be laying down in recovery mode today. I was looking forward to meeting Kelly at Tractor Supply today! OH good grief, if I had imagined those words coming out of my mouth a few years ago I would have laughed. Now going to tractor Supply is entertainment!

Off to shower the dirt and blood off me. Tylenol, the couch, a blanket, a pillow and Tucker closely thereafter.

I'd make egg salad too but I am out of eggs.

They sell Basmati rice at Costco...it tastes good and has kind of a nutty flavor. I don't usually buy it, but have tried it before. My DH doesn't like tilapia since he says they are more of a "bottom feeder" type of fish- I won't enlighten you with his nickname for them- and prefers to buy salmon when we eat fish (not all that often- more of a company dish).

I have been buying different types of rice in the Winco bulk bins (our "cheaper" grocery store here). I mixed "jade rice" and "Madagascar pink rice" in with our white rice, kind of sparingly and just to color the rice a bit and to add nutrition. The kids complained, DH complained, but I loved it! Ever since then, now I mix in some brown rice or the other types of rice at a ratio of about 1/4 healthy rice to 3/4 white rice. I do the same with whole wheat flour and white flour (the same ratios) to boost the nutrition when I bake. I think my family is used to it now.

My method in the kitchen is to follow recipes but I do adapt them to what I have on hand. I don't usually buy "strange" things and so if there is something in the recipe I am not familiar with, I leave it out or skip the recipe. My Mom was with me once and she wanted some Cardamom for a recipe - we were both shocked to find it was $11.00! It is a spice- she didn't buy it. It is fun to bake though. I LOVE turning basic ingredients into something the family loves to eat.

One of our favorites:
Popovers
2 cups milk (you can use dry milk powder here- just use 2/3 cup powder mixed with water to make 2 cups total)
6 eggs
2 Tbsp extra light olive oil
2 cups flour
1 tsp salt

I don't get good results with these if I mix them with the Kitchen Aid. I use a wooden spoon and stir just to mix. There are clumps in the batter but my family likes how they turn out this way.

Makes 24 popovers (use regular muffin pans). Bake at 450 degrees for 10 minutes and then decrease heat to 350 for 6 minutes - at least that is how I do it in my oven. Be sure to monitor carefully as they burn quickly. They do deflate right away. We add butter and jam to them at the table. They are hollow!

The recipe is adapted from a book I have (Better Homes and Gardens Quick Breads Cookbook) but I have changed the recipe - my MIL suggested more eggs and it worked great!
 
Thanks everybody. I rested this morning but I am back up and at it! Michael cleaned out coop #1 and I stapled chicken wire across the entrances to the nest boxes. Everybody in there, Martha, Cathy, Skye, and 11 Icelandics were sleeping in the nest boxes. The only one on the roosts has been Stella. She ain't no baby!

Poopy nest boxes are just gross. My old girls have quit laying and the Icelandics are too young so they lost access for awhile. The egg eating started up again in the Isbar coop because I didn't collect eggs yesterday. I am quite sick of that for sure.

So I am making grilled cheese sandwiches for dinner and calling it a night. We have to gather up a few little cockerels tonight for Framer Fred to pick up in the morning. Kelly will be here to see how we feed the animals. (if she survives eating chia seed pudding for breakfast)

Kelly has kindly offered to feed our animals next week so we can get away to the coast. Missing this trip was on my mind as my head was hurling towards the ground this morning. I haven't been away in three years! Michael has, but not me.

very similar to my grandmother's recipe for popovers, except hers is even simpler: 2 cups milk, 2 cups flour, 4 eggs, salt. mix with a fork & bake at same temps as yours. i usually cut it down to a 1/4 recipe (1 egg, 1/2 cup each flour & milk), since i live by myself -- delicious & makes the house smell fantastic.

Did you hatch more singer finches?

Hi, sorry I was away a couple of weeks. Left DH home to take care of all the animals. He said the first day I was gone the chick disappeared and he couldn't find the other two eggs (I found them in the bottom tray). Sometimes the parents will toss eggs and chicks (still haven't found the chick). Anyway, I got home yesterday and the hen is spending time in the nest. So I suspect she is getting ready to lay another clutch.

Well, today I decided to start my cheese making education. First cheese? Juusta leipa, a Finnish cheese that is made in the western UP and Wisconsin.

Good choice, my dad was a Finn!


Deb, or anybody else that might know, what are these?

I thought they were candy molds but the tag from the seller says "mini tart pans." That is the miniest tart pan I have ever seen. I put a quarter in the picture for reference.


Yup, those are tart molds (sorry, as I said above, I've been away). I pick those up whenever I see them in a yard sale. I have a whole set of the oval and round ones. I don't have the square ones. They work best to press in a shortbread type crust, bake, then fill. Yum

Tomorrow is the day my new counter tops get installed. I'm excited. We are doing the backsplash ourselves - even though Mike would rather not. Shoot - it can't be that hard, can it?

This is my back splash tile. Do ya like it? I was thinking of a dark grout, instead of that white. What do you think?
