I made the best chicken and dumplings last night via the easy route. I cooked a rotisserie chicken from the grocery store in boxed chicken stock, with a little poultry seasoning, until the meat fell off the bones. Pulled the meat out and discarded the bones and skin. Made a butter/flour roux and added it to the pot. Poured in a half bag of frozen pearl onions and a half bag of peas and carrots. Added the meat back into the pot along with some heavy cream, not too much. Opened a can of biscuits and cut them into thick strips on a heavily floured board. Dropped them, one at a time, into the simmering stock, put a lid on and left it undisturbed for 20 minutes. It was so good. Perfect comfort food for a cold snow day!
