Turnip tops can be cleaned chopped and steamed with a little bacon grease or olive oil and served as a green.....  Very strong flavor but an excellent side dish for any meal.

Our family used to make a whole meal out of them.   

For what its worth Beet tops can be cooked the same way.  So if you are doing a beet dish plan on cooking those greens...  Beet tops need to be double washed though...  sandy soil...

I think I wouldn't mind the greens, but use coconut oil instead the bacon grease. Coconut oil is very healthy. Bacon grease / lard is actually a good cooking fat, since it does not burn. Lard is a healthier cooking fat than any of the vegetable oils, which burn into unhealthy.
I am cooking with coconut oil and it's great, I am sure, it helped me to lose weight. Just saying....

Actually you dont have to use oil at all... Smoked paprika would give you an excellent smokiness to the greens without messing with the flavor... Or even liquid smoke...

Steam saute used to be my go to for changing out from frying. Works with beef, Fish, and even chicken.... As a lifteime member of weight watchers we were allowed two servings of oil per day.... So I opted for oils that had flavor... a serving was a teaspoon... A teaspoon of Sesame oil was an excellent flavorizer for food...

and surprisingly Butter is a good oil too. Not margarine just butter because it has no trans-fats in it. Its easy to digest and gives excellent flavor.

Face it if food doesn't taste good then no matter how good for you it is you wont eat it. Lots of seasoning...

I lean toward low carb when I can but I like veggies and fruit too much.... So I tend to disregard fat quantities opting to use animal fats like bacon grease I dont buy lard... I may give lard making a try but the store bought has additives for shelf life.... So I use Good Olive oil occasionally coconut oil Butter and occasionally corn oil because some things taste better in corn oil.

I do fry but never deep fry... My southern background craves Fried Okra now and then. But seriously like in all things Now and then means NOT every day or even every month... I fix it maybe two times per year. And Okra HAS to be cooked in bacon grease... I do cut that with olive oil though.

Again I use lots of garlic and pepper and paprika and onion and poulrty seasoning and Rosemary and Basil and what ever is availalbe... to season food and make it somewhat aeromatic because it makes food taste better. and there are no calories in seaonings.

I mentioned a while back that I dont bake. While I can and have been known to make rolls and real from scratch corn bread... Its not in my best interest to do so... Carbs are not my friend and I can live without most of them quite well.

Who is not a fan of ice cream? Sheesh. You won't ever find ice cream in my house, because if it's here, I WILL eat it.

B&J had a flavor with chocolate dipped potato chips, sounded good in theory but was one of the worst ice creams I have ever eaten

I use coconut oil to saute almost all of my veggies. I especially love it with broccoli.

And Okra HAS to be cooked in bacon grease... I do cut that with olive oil though.
I do have to agree here. My husbands family is greek and they love their fried okra. I don't make it much anymore.......funny, those okra plants seem to get missing in the garden planting.

I don't mind it every once in a while, but one plant puts off SO MUCH okra. There's only so much a girl can eat.

Eva thank you, I just happened to get "Happy Chocolates" today. My plant mentor sent me a box of various chocolate candies , and I do the same to her. We try to get something different, off the beaten path but nothing extreme like bacon or salsa or hot peppers in candy. Neither of us should be eating them but, we don't want to hurt each other's feelings. They never tell you that friends can make you gain lots of weight.
