Stuffed chicken breast

I saw this on the Food Network, so it isn't mine but oh, so good.
I had six boneless/skinless chicken breasts
one tub of crumbled blue cheese
six slices of bacon
salt & pepper
cornmeal and flour for breading.
about 1/4 cup of olive oil.
Preheat oven to 350'
dice up the raw bacon into bit pieces and fry till crisp, remove and drain.. Slice the breasts so that you have pockets in them.
Fill with blue cheese and bacon bits. Season the outside of the chicken.
Roll into cornmeal/flour mixture to coat. This is a light coating. Be careful to keep the pockets closed or use toothpicks. I had no problem keeping them closed without toothpicks.
Brown in the same hot pan that you used to fry the bacon up. Get each side a nice golden brown. Add the olive oil if you need more fat.
Now line a cookie sheet with foil. Spray with Pam and place the browned chicken on the sheet and cover with foil. Bake for 40 min. or until your meat ther. says 170'. I served these with unpeeled new potatoes mashed with garlic and sour cream. oh, yeah, calories are optional

I am so hungry after reading this, I have to prepare it on the weekend. I like stuffed chicken or turkey, especially you can be creative with the ingredients and put in anything you like.
