Stuffing the Turkey

I'd read that stuffing the turkey with the traditional breading was a bad idea, because the breading pulls all the moisture out of the meat and you end up with a dry bird.

For years now, we've been stuffing the turkey with slices of onion and apple, some carrots, sage, and some celery leaves. The turkey always comes out moist. (you throw away the stuff you use for stuffing).

We use some of the pan drippings to make bread "stuffing" in a caserole pan.

Just thought I'd pass this along in case anyone wants to try it.

I put a quartered orange a half a lemon and fresh herbs in the cavity.

And I make stuffin Muffins.
 
I do the traditional bread stuffing and I have yet to have a dry bird. I used to cook my stuffing separately, but moved on to cooking it in the bird (takes up less space and the stuffing tastes WAY better), and I haven't found any difference to how moist the meat is.

I use those cheesecloth stuffing bags. One pull and all the stuffing comes out of the bird. No muss, no fuss.
