Thank you so much!Lovely, peaceful reads full of animals are the Stillmeadow books, by Gladys Tabor. The later ones can be a touch melancholy, so stick to the early ones if that's an issue.
If you like some light fantasy, definitely read A Hat Full of Sky by Terry Pratchet. A fun take of coming of age with a background of sheep, clever sheep dogs, wise old women and brownies
If you are into mystery, read Rita Mae Brown and Sneaky Pie Brown's books. and also her Sister Jane series, I love the bits where the animals discuss what's going on

I loved 20,000 leagues and around the world in world in 80 days. I’ll have to check out Journey to the center of the earth.It's funny that I'm a huge fan of both Mark Twain and Jules Verne

The Adventures of Tom Sawyer and The Adventures of Huckleberry Finn,
And also 20,000 Leagues Under the Sea, Journey to the Center of the Earth (these two are probably not adventure enough and too nerdy-sciencey for most) and Around the World in Eighty Days (a little more like an adventure book rather than a scientific journal)
