I’m just curious if this a Easter egger and a pullet. I’m thinking a roo but not sure. Will be 8 weeks old

Definitely a roo, and Easter egger is a pretty broad term since it's not necessarily a specific breed.
How can you tell cause I can see pointy feathers and round feathers?

Yep, rooster. The feathers, size and color of comb and wattles, leg size, and coloring all have to do with it.

Ya I was thinking it was a rooster but I wasn’t sure what mix it was. Cause someone told me that certain breeds the hens can get big combs at a young age.

I agree he is a cockerel.
At 8 weeks old, you can't go by rounded vs pointed feathers, as all chicks have rounded feathers at that age.
The pointed feathers in cockerels come in around 10 to 12 weeks.
The giveaway is the big, red comb and wattles.
Thank you
