My Cabbage is ready.

I have huge heads, We are giving away the Zucchini or feeding it to the chickens. The deer the other night destroyed about a dozen squash. I am even getting tomatoes.

We have picked quite a few egg plant, now we have to figure out what to do with all of them. They are huge too.
 
No matter how much I don't like ducks I have a lot of respect for my only hen now, she's a 2 1/2 year old Swedish who has laid an egg everyday for the last 3 months

My cabbage has a long time to go.

How do you make your kraut, do you keep it refrigerated or do you can/process it ? I just refrig mine.

I noticed a tomato turning pinkish yesterday.

Chickens love zucchini.
 
Jerry, I am not sure, I think those are false chanterelles again.

The head looks too think on the edge and those look like real gills. The color is off but not by much. Can you separate the gills easily?

I am not an expert though.

Again, the main way to tell a true chanterelle from false is by examining the gills. False chanterelles have true gills, although they are forked on the edges. I make it in crocks. I just use a cabbage cutter (my Grandpa's). I mix layers of salt and cabbage. I Should say I salt every layer a little. If I want the Barvarian Kraut I add caraway seeds to the layers.

I just can it and set in on the shelf in the basement. The only ones I had go bad were the ones I "made" in the jar. That method is for the birds....
 
I think I will give up on chanterelles . I thought I found some a few years ago . Turned out to be jack-o-lantern . Now these false ones . Not worth the risk . I did find some ripe blackberries up north . One patch were large enough to pick . Most were pitiful small . I noticed they are softer and milder than the wild ones here . I picked a handful for seed . Maybe cross them with larger berries for a hardier large berry . I have hen of the woods mushroom that grow here . I may take some up next trip in October to seed some new oak stumps . That is how I got them to grow on my property here . I may try that if I ever find true Chanterelle .

Your next trip up here I will see if I can get my cousin to come with me to hunt mushrooms with you.

He has an uncanny knack for finding them.
