Holy Smokes! That is one heckuva rhubarb plant!

Hey, in trying to find the mythic cold-hardy elephant ear, I learned that they are (or at least some of them) varieties of Taro, native to Africa. So... the roots are used for food. I think I’ve read though, that there’s some special process needed to render them edible, so I wouldn’t dig any of them up and start munching on the corms without further research...
