The problem is trying to get into a butcher shop.

My son tried to get one in and they simply said were full for the next 6 weeks.
so I will have to go old school and do it myself.
It won’t be that hard, I will take the hams and picnics for smoking, along with the bacon and jowls. I prefer my smoking to the smoking at most butcher shops. They tend to use cold smoke.
The loins will come out to make chops, ribs for grilling and the rest will be ground. I have a pretty nice grinder so it won’t take that long.
I have castings for sausage, and polishes. I am going to try my own mixes of spices. Just so I can say I did it.
I put my chicken poop and chips on a compost pile along with leaves, but it takes forever for the chips to break down. Of course, that could be my fault, I don’t think I water it enough.
One thing about doing it yourself is you don't have to worry about getting back what you actually brought in. It will also give you something to fill up some of the sequestration time.
