Howdy and Welcome to the friendliest forum around!Hello from Austin, Texas. I have a small colorful urban flock with some amazing egg producing ladies.
Well, when you put it that way. No, I won't make you wait.
Here you go.
Cranberry Nut Bread
1 orange
2 cups flout
¾ cup sugar
1 ½ tsp baking powder
½ tsp soda
½ tsp salt
2 tbsp oil
1 egg
1 ½ cups fresh (or frozen) cranberries, chopped
½ cup walnuts, chopped
Preheat oven to 350*
Wash orange; remove seeds and white center membrane. Grind whole orange (including rind) in food processor. Should equal ¾ cup.
In a large bowl mix flour, sugar, baking powder, baking soda and salt.
In a medium bowl beat oil and egg, add orange. Stir into flour mixture just until flour is moistened. If batter is too thick add a little orange juice. Gently stir in cranberries and walnuts.
Pour batter into a greased 8 ½ x 4 ½-loaf pan. Bake 70 minutes or until toothpick comes out clean. Cool bread in pan 10 minutes; with a sharp knife loosen bread from sides of pan then remove from bread pan.
Cool completely on a wire rack.
