I think she means how it's easier to see depth and stuff like that on a lighter animal than it is a darker one
That's what I read, too- markings and color can play a role in judging because the features of the animal are clearer on a lighter dog. I don't know what's judged on cows, but on dogs, it is easier to see coat texture, muscle tone, bone structure, rib spring, etc, on a lighter dog. In some breeds, markings can help by hiding straight shoulders, giving the illusion of length or lack thereof, etc.
 
What do you mean by define everything on them? (This is clearly my first year in 4H and showing, lol!)
With dairy I believe you wanna be able to clearly define how their bone structure is black may make them look way skinnier than they actually are and it would be hard to see how they look because everything is black 😊
