Thanksgiving Turkey Processing

Oh, my birds are about 34 weeks, I picked them up on the 30th of march and they were 2 weeks old then. So that puts them at 8.5 months old and since they free ranged all day they put the weight on more slowly because I was told that they would be ready at about 22 weeks but they were not big enough is why I waited.
 
They both look like hens in the pic you provided. How old are they in the pic? They don't look like BBB to me but maybe they are young in the pic.

I will take a newer pic tomorrow and post, this is the first time I have purchased turkeys and I bought them from a poultry farm so I have to go by what they told me, I thought BBB were brown is what I was trying to purchase, but don't know and then in the poultry book I thought they looked like hens but then I have people telling me they are toms, so who knows what I have. thanks for the info, and will look forward to seeing what you say after tomorrow. It was summer time when that pic was taken so I'm not sure how old they were maybe 4,5,months old
 
I personally would process. Broad Breasted types aren't meant for long lives. BBB and BBW are meant to grow heavy fast, they are a fast growing meat production turkey. If you try to keep them longer as a pet it may be possible with restricted diets. But its quality of like wouldn't be fantastic, possible heart attacks or broken legs. As for egg production if they made it to the spring they might lay eggs then but I do not have experience in that. I raises a heritage variety, Bourbon Reds. They are my pets and provide me eggs and poults and meat . I also raise BBW and those get processed the weekend before thanksgiving also.
 
Thankyou I will process I did hear that they could die of a heart attack,but being new was wondering if that really was the case so I guess so but being free range it has taken them longer to get really big and the one is starting to have trouble walking. Any tips on butchering. They will go to freezer camp in about a week

Hi, ok I processed my bird today, have never done anything like this before and never have seen it done. With that said, I think I did exceptionally well. I had everything set up and I didn't chop her head off I sort a held her and slit her throat and I did get the juggler first time, I was not ready for the throws of life figured there would be something leading up to it, I did restrain her so not to bruise the meat anyway I would make some butchering cut differently, first being, I didn't realize that the skin would pull back so far if cut too low when getting the stomach etc out, also I didn't find anything about how far to cut to get the oil gland, everything I read just said cut it off from the top of the tail, so I just cut the whole tail off. I was worried there would be an awful smell but I didn't smell anything but then I was not trying to either. I was surprised that she didn't have much fat on her at all but she was a big girl I will get help next time because the lifting part is what got to me. I have her in freezer camp. Anything special I'm supposed to do to her to make sure she is tender? Will also be the first time eating a fresh bird too.
