I think it's just because they're A) not common, especially good ones, B) a lot of that style of breed need special housing, C) they're pricey and D) they aren't great layers like most backyard flocks are.
No special housing is required, unless you get that rooster aggressive rooster among the flock.

They are expensive due to dwindling population, & genetic diversity, & not many people willing to keep the breed from going extinct.

They lay pretty well, just not like your Barred Rock, or Buff Orpington.

They lay every other day, but sporadically, occasionally they take a week long break before laying again.
 
If I crossed a lavender orp with a speckled Sussex, what color would I get? I could ask so many random combinations. I find it so cool!
Black with Red leakage, will be split for both lavender, & mottling. Both those traits are recessive, & won't show in the first generation.
