Your skill is amazing. I have tried this and it is very tedious.

I appreciate the pictures showing how to retrieve the second/lower testicle, this will keep me from having to cut the bird twice.

Agreed on the dead thing - Practicing on a dead one may sound icky but it is the best thing to do before going to a live bird. Often when first doing this, your first bird may die. The next, though, are easier.
 
several reasons.

they don't fight like roosters do, their meat doesn't get tough or stringy like a rooster's does, the bird accumulates more fat (juicier), and the meat is thought to be more tender, juicy and flavorful than a hen or rooster
