DO NOT pick him up by his feet and let his head hang down...you can kill a bird in seconds by doing that! Their respiratory system cannot handle that position. Holding him under your arm or in any safe position where he knows you have him under control will serve the same purpose.
 
I have had roos that are great protectors of their girls without being agressive towards my kids. Our last rooster before we got this young one we have currently was awesome! He would come and eat out of our hands and let us hold him, but he was great about being on the lookout and even fought off a racoon once. In the dark no less! You don't have to have a roo that's agressive toward people to have a great flock protector.
 
Just thought I'd share a pic... This guy is the offspring of an OE X WhAm cross. He now lives with a friend a few towns away.

What were DEER going to do with chickens ? ha ha I see this as funny...........of course deer are host to ticks and other parasites but other than that they are vegetarians. And I doubt if they could get to close to your birds ! I am not trying to be mean. It is just funny because deer are afraid of anything that moves but they will eat all and I do mean ALL of your plants.
