Do you have a Kindle? If not Amazon has a free kindke download for your computer. The BEST book is the " I Can Can Beef." b y -Jennifer Shambrook. Fabulous buy at $2.99. Her other canning books are poultry, beans, relishes,, etc. I have mine on loan and will note diwn recipes.

One more thing before I bore you to death, I wanted to get back to my fermenting. So I bought two large bunches of radishes and quartered them. I put 1tsp salt in a quart jar and filled it with radishes. Added water to 1" and closed loosely and put in my cabinet for 5-6 days. Then today I put in the fridge for up to six months. Gets my probiotics.
I also made a fermmented saurcraut

I really want to ultimately can my on tuna... I have had it before and it ruined me for the stuff in a metal can.

My sister canned salmon one year - her hubby went on a fishing trip to Oregon with a friend and brought home some nice fish. She cans venison every year, so figured "what the heck, lets do it" and canned up the fish. It was fantastic! and easy to do.
 
Bruce, this happened in 1955 when we lived in Dallas. I remember Mama pouring off the top cream to save for making butter. Only happened once or twice, because, why bother. They now have oleo. :lol:


Yep and now oleo, AKA partially hydrogenated oil, is on the FDA hit list as seriously unhealthy "food". I grew up on Imperial but switched to butter, and only butter, when I got out of college and moved to Vermont 36 years ago. And, I hear, if you want a nice flaky pie crust - lard, and only lard, is the thing to use. Bye bye oleo (except for Blooie's Oleo Acres of course).

And STILL they are hyping no fat diets. Love me some butta. I bought two pounds on sale the other day. Tth cashier looked at me funny. Nothing else but fruits and veggies. (Started my fermenting) ;)
 
Butter keeps in the freezer about forever. Might as well stock up when it is on sale Linda!

About the "no fat" diet. Are they talking animal fat or all fats? 'cause some years back my nephew's dietary fat was so low the doctor told his parents he need more fat in his diet. Don't recall if it was animal, vegetable, both or didn't matter.
