I've been suggesting it to my girls for weeks! I may put the crock pot out there for them to see for a few days, see if that helps..... freeloaders. ;)

DH had the eggs for breakfast - commented that they were sure getting enough calcium because their shells are really hard and the yolks are very dark. He scrambled them with a store egg and ate them on toast, so no report on how they taste.

I will let you know when I taste test the two they laid today. That makes 4 eggs in two days - equivalent to 2 large eggs.

I don't THINK the color of the yolk is related to calcium intake but what they eat. Your birds obviously have a better and more varied diet than the factory farm layers.
 
I finally had a day free of pullet eggs! Every egg I brought in was on the high side of medium and above! Yipppeee! Also got a new customer yesterday so that should help get rid of some surplus I've had through the weeks. Got to the point where I was putting pullet eggs in a separate carton and tossing the dozen of them in free when folks picked up their eggs. I did tell them that once the eggs are back to consistency in size then I would go back to just sending them out the door with their usual orders.

That decorative platter you used early in your recipe post is called "Irish Linen" by some

Might want to substitute "fresh eggs" with "eggs several days old laid by your happy, healthy backyard flock". Easier to peel and no chance someone would use pale yolked egg factory "product".

Things to dice/chop/make-really-really-small and mix into the yolk and MAYONNAISE (other than paprika which is, of course, a traditional staple of the dish):
(notice anything common with these?)
  • Fresh tarragon
  • Fresh chives
  • Fresh thyme
  • Fresh scallion


* We have to include at least one woman as well. When my sister was in college, her INSISTENCE on BF and ONLY BF was such a big deal that her boyfriend's frat brothers bought her a gallon jar of it as a joke.
 
I just love that dinnerware. Mine is by Temp-Tations and is called Floral Lace. I just love it. I needed the Miracle in Miracle whip, Bruce, although I also prefer mayo! I needed all the help I could get!

If you click on the picture of the eggs in the cold water, you can see the date on one of them... 9/20. I took the pictures on 10/6 so they were a couple of weeks old. I still can't peel them worth a tinker's, um, whatever so I decided to make a humorous entry in the contest and acknowledge my defeat. <sigh> Yep, I've been defeated by a bunch of hard cooked eggs.
 
Hard cooked eggs....

Cold water
Cold eggs
bring to boil
as soon as it boils take off the heat and put a lid on it

leave set for ten minutes
pour off hot water
Immmediatly put the eggs in ice water.

when cool enough to handle
Tap egg and roll it causing the shell to break in small peices like less than the size of an eraser head.

Start peeling at the big end.... where the air cell is.... Once you get a hold of the membrane it should come off in one piece. It takes me ten minutes to peel a dozen.

And the egg because its not over cooked will NOT have a green layer.

I did 3 eggs. The 2 that were several days old peeled really well. The egg that was laid that morning (gotta test these things you know) still wanted to lose chunks of white with the shell.

Definitely NOT as set it and forget it "bring it to a boil and take off the heat" method! I've been fairly successful with that. I don't bother with a timer, when the water has cooled enough I can pick up the eggs, out they come.
 
How long do I cook pullet eggs for hard boiled?
My problem with the bring to a boil, cover and let set is that my cookware will seal itself tight if I put a lid on a hot pot. My friend had that same set and she actually had a lid crush as the pot cooled...
