If I crossed a white leghorn to something other than a white leghorn, hidden genes could pop up?

I once crossed a silver Sebright rooster over some hatchery leggern hens and got mid to small sized rosecomb looking leggerns. Most of them came dominate white with a couple of them being barred. They layed very well but were too flighty for me. I let them grow to about 6 months old and then....

Spoiler: what happened to the leggern x's...?

I ate them, poor things.
