You've got it locked. Swipe down from the top, look for a gizzy that looks like a padlock and click that. That'll unlock it for ya.

Spoiler: Harvesting organ meat

When skinning the chickens and cutting the meat off the carcass, you don’t necessarily have to gut the bird because you aren’t keeping the bird whole. But we harvest the organs from a skinned bird for fish bait. The heart, liver, kidneys, and gizzard. I didnt get pics of harvesting the gizzards.

Right next to that on the right is a thing that looks like two pictures, one superimpised over the other. And just to the right of THAT is three little dots. Tap that and you get the menu with the crossed-out eyeball. (Far right).
