Same! I gave up on the sourdough bc it is so dang hard to cut! Especially with my weak, arthritic hands and arms. With those tips on a softer crust I may try the overnight artisan breads. You get the SD taste without the starter. They are really good.
 
You can add olive oil and honey to your sourdough for a less hard crust. And make sure there is lots of steam in the oven, whether it is by putting a few ice cubes in your dutch oven and spraying the top of your loaf with water before putting it in the oven, or putting a pan of water on the rack below your loaf if you open bake. You can butter the crust as it cools also. My current favorite loaf made with active dry yeast is a rye blend and is darker because it has a bit of molasses and cocoa powder in it. 🥰

But sourdough has a lovely flavor that you just can’t get with active dry yeast. So I love them both. I love all the bread. 🍞 🥯 🥖

Wow. That is beautiful and probably delicious too! You are so talented. I tried my hand at sourdough and it was fun but one extra piece of maintenance and mess in my busy life.
 
I'll just have to keep a sharp knife because I can only give so many away. I raise 3 different autosexing breeds in the same flock but it doesn't matter much when you eat them.I love the meme!
With breeds I can sex at hatch like Olive Eggers or Legbars, we cull extra roosters as soon as I take them out of the incubator. We cull quickly and humanely so they feel no pain. It is impractical to feed them all to maturity, especially birds I know I won’t need for breeding, and we stay plenty covered up in roosters as it is. I haven’t had to buy chicken or turkey from the store in I couldn’t tell you how long because we have so many.
 
I'm just south of you and a lot of my fruit trees have flowers. - I hope this doesn't keep them from fruiting this year. Looks like it's going to snow today, keep getting colder until noon tomorrow, and then gradually warm back up.
We had a horrendous thunderstorm last night, 70 mph winds and crazy heavy rain. I’m thankful that’s all it was though. I’m terrified of tornadoes. It is supposed to snow here today, and is flurrying a bit now. I am off work this weekend and it is supposed to warm back up by then, thank God! We have so much to do outside.

I think that it's cheaper to just buy a store bought chicken at the grocery store then the cost of the feed to raise a rooster to maturity to eat.

They are saying 105F here for this Friday.
 
This is the sourdough calzone recipe I use. I use only 00 flour or unbleached bread flour though and just enough water to get my dough right without it being overly wet. Always start by adding 325-350 grams of water then slowly add more as you need it.
