Processing 10 birds tomorrow...

I'm trying to make a mental list of all the supplies.. Can anyone let me know if I am missing something:

Killing Cone
Killing knife
Scalding pot
Temperature think to check pot temperature
Wheelbarrow for plucking
Processing knives
chicken shears
bags for packaging


I feel like I am missing something... :/

Chickens! Don't forget the chickens ...

The weapon for killing..
if you are hanging to slit the throat you need rope.
You need a hose for running water.
Containers for soaking

Is it important to ice bath? If so, why do we do that?

You want to get the bird's body down into the "safety zone" as quickly as possible. Ice water is useful for that, though some people only chill their water to "well water temperature" and still have "cleaner" birds than come out of a factory.
 
Bucket of ice water for quick chilling?
I never chilled like this before. :S

ETA: to lessen bacterial growth is that why?

If so, they go in the cold storage which is fridge temperature. But I can chill with ice water if that is very important. I just didn't know.

Not chicken related but does anyone know a quick fix for sciatic nerve trouble other than cortisone.
