The NFC B-Day Chat Thread

Baking is my challenge to myself this winter. I really miss doing it (especially the breads) but now have to learn how to adjust for high altitude and my gluten intolerance. Easy to find recipes for one or the other, but not both situations. Guess DH will be my guinea pig, lol. Hope he's up to the task!

I didn't realize you had a gluten intolerance. My sister...who is the Betty Crocker of baking has been trying gluten free recipes for herself. She did a white cupcake that was really good for my sons graduation as I have a couple friends with gluten intolerance. I ate mine without frosting and it was still good

she's from Minnesota also so that doesn't help with the high altitude.

Gluten intolerances are expensive and a big challenge for those who love to bake.

Gluten intolerances are expensive and a big challenge for those who love to bake.

It makes me feel sort of self-conscious so I don't mention it often...it seems a lot of people think it's one of those "fad" issues. Trust me, it's real and a pain (literally).

So my winter project is to revise some of our favorite bread recipes to work with the intolerance thing and work for the high altitude. Might end up tossing the old favorites and finding new ones, lol.
 
I'm not sure if I told you guys this before or not. My son is the deli manager at the Red Apple supermarket in Lovell. One day he grabbed a box of chicken to take home to the family for supper and as he went through the checkout the checker, Susan, said, "Oh, that always smells so good when people come through the line!" Kenny said, "Well, come on back and we'll fix you up with a box." She kinda laughed and said, "I haven't eaten fried chicken since I was 6 years old because of the coating." (She's about my age) One of the other customers said, "My husband has Celiac (I'm sure I spelled that wrong) so I do most of my shopping for him at the health food store in Cody."

Well, he got to thinking about that, and then started doing some research. Now every Monday at the Deli is "Gluten-free" Monday. He messed with this recipe and that one, and finally found one that he was happy with. He even researched spices, just in case some of those have gluten in them. (I dunno, do they?) They had installed a new fryer but the old one was still hooked up too, so he completely stripped it down, did a full clean out, disinfected it, and only gluten-free stuff is cooked in it. He didn't know how serious cross contamination can be with gluten, but said if some kids are so allergic to peanuts just being in the room with someone who's eaten a pb&j can make them sick he wasn't taking any chances.

This has been a huge hit! He didn't know so many people would appreciate having deli foods they could actually eat and enjoy, but on Mondays he comes home exhausted!

OMG Blooie, that's fantastic what your son has done! Cross-contamination is a problem...a lot of times that means buying the more expensive option because cheaper ones have been processed in facilities that handle everything (for example: Quaker oatmeal kills me but Bob's Red Mill oats are ok). What a wonderful service your son has performed and I'm truly glad it's been beneficial, both to his customers and to his business.

It took me quite a while to figure out what was causing me problems...DH finally put all the pieces together. Now, other than the inconvenience factor, I rarely have a problem and when I do, it's because I risked something too good to resist (note to self: graham cracker pie crusts are not my friend).

Tell your son he needs to open a deli franchise in Rawlins...I'll be his first and most devoted customer every Monday!

I'm pretty proud of him, Debby. Maybe part of it is because of Kendra. It wasn't until after she joined the family that we became really cognizant of allergy and sensitivity issues. She's allergic to latex - who knew that bananas and kiwis (among other things) are in that family, or that many dolls with soft, pliable faces and hands contain latex to get that softness? Did you know that good old moleskin has latex in the adhesive? See what I mean? We are paying more attention to that kind of issues...things that don't affect most people.....and Kenny took that a step further by recognizing how many things gluten-sensitive people miss out on.

Rawlins, huh? Gee, that would be quite a commute since he has to be to work at 4:00 am, and I AIN'T letting them relocate!

Don't know what's on the agenda yet....Ken leaves tomorrow for more lodge visitations and will be gone until Friday evening again, so I'm sure laundry and packing will be involved.
