A well done plaster wall wouldn't look a lot different than drywall, flatter in some respects since if there are drywall butt joints there will be a hump where the tape is and that includes all inside corners. You can't avoid that without mudding the entire wall, then you are basically plastering the drywall anyway. I think it takes special genetics to be good at lath and plaster thoughI love the look of plaster walls. I may just put a very thin coating of drywall mud on the whole wall to try and achieve the look.

Gonna be a big mess ripping all that out. BUT, I would guess it cracked a bunch when the house was moved. The newspaper insulation would be a bigger reason to rip it all down, I think that would be hard to remove. But if it could be done you could rewire and then have the walls foam insulated. No plumbing on outside walls. No need to remove the knob and tube, just run new wire.
