Do you cook all that up and then freeze into individual batches?
Yes , I freeze it in meal sized portions for the two of us. A LOT of spinach cooked down to 6 meals worth. The red cabbage is still cooking, and I expect about 10 meals worth from that. I'm still using up the sweet corn that I froze last autumn.
 
I would love to call in sick! We heard today we have kids with possible staff infections. I think I need a new job. That worries me more then head lice.:th

Kids are just little germ incubators with legs. Stay safe and don't carry that into summer!
