Do you leave it at room temperature, Ron? I want to try this.
For making cultured butter, It should be cultured at a bout 75F, so room temperature in general.

I have a bread proofer that I set for 75F for room temperature recipes. I set it to 85F when I make yogurt.

In our bbq restaurant at the WY golf course I used offset bread knives ordered from this place: https://www.webstaurantstore.com/search/bread-knives.html

I had a couple of either the 9" or the 10" with the black handle, can't remember the size. They worked well for slicing the 100's of burger buns I was making.

I used to get a lot of kitchen stuff from that web site, they have good stuff and reasonable prices.
I have a bread knife like that one!

I got mine at a restaurant supply store called Smart and Final
