The BEST porcupine meatballs
hamburger
cooked rice
salt
pepper
mozzerella
old bay(or any prefered mixed seasonings)
garlic powder
onion powder
eggs
cr.shroom soup
basil
milk

Mix together all ing. Form large meatballs(sometimes I put chunks of mozz. inside). Grease baking dish. Put meatballs in dish. Mix soup and milk till smooth. Pour over meatballs. Bake 350* 45 min.covered. Put cheese on top, bake 15 min. more uncovered.
I change this to how I'm feeling.

Stuffed groundbeef rolls

1 lb. Hamburger
1egg
1t.salt
1/4t.pepper
1/4t.fine dry breadcrumbs
1/2c. water(sometimes it takes less, sometimes more)
3oz.cr.cheese(can be flavored)
flour, to coat rolls
2T.butter
2T.flour
1 1/2C.beef broth
1/2C.sr.cream
1t.tarragon

Blend first six ing. Mixture will feel very moist.

Tear off about 20"of waxed paper, moisten topside. Forma 4"wide strip of meat mixture the length of the paper.

Cut cr. cheese into 8 sticks. Put along the length of the meat, end to end.Roll up. Pick up paperto help lift meat over filling, forming a lengthwise roll.Cut into 8 pieces crosswise(sometimes I cut more as these are VERY filling).

dust each roll with flour on all sides. Heat 2T.butter in pan. Brown rolls on all sides, cover, cook 10-15min. Remove and keep warm. Stir flour into pan drippings. Slowly add broth, whisking to keep smooth. Cook untilthickened. Stir in sr. cream and tarragon. Pour sauce over rolls.


Greek pasta and beef

1lb.hamburger
1 lg.onion, chopped
1 garlic clove, minced
1-8oz. tomato sauce
1/2C. water
1t.salt
1/2t.cinnamon
1/4t.nutmeg
1/4t. pepper
1lb.elbow macaroni, cooked, drained
1 egg, lightly beaten
1/2C.parmesan cheese

Sauce:
1/4C. butter
1/4C.flour
1/4t.cinnamon
3C.milk
2eggs,lightly beaten
1/3C.parmesan cheese

Cook beef, onion and garlic, drain. Stir in tomato sauce, water and seasonings. Cover, simmer for 10min.stir occasionally.

Meanwhile, combine mac., egg and parmesan cheese; set aside. In lg. saucepan, melt butter; stir in flourand cinnamonuntil smooth. Gradually add milk. Bring to a boil,cook and stir for 2min.or until thick. Remove from heat, cool slightly. Stir small amount of hot mixture into eggs; return to pan. Cookand stir for 2min. Remove from heat, stir in cheese. In greased 3qt. baking dish, spread half of the macaroni mixture, top with beef mixture and other half of macaroni. Pour sauce over top. Bake uncovered 350* for 45-50 min. or until bubbly and heated through. Let stand 5 min. before serving.
Makes 12 servings.
 
Backyard Buddies 10/13/08



Tonight we're having smoked pork butt (Country Style Ribs).
Put pork butt or ribs in the crockpot.
Sprinkle salt all over.
Sprinkle half a bottle of liquid smoke all over.
Crockpot on high all day.
Shred.

This will be served with cheesy rice and peas and carrots.

Carnitas -
Pork Butt or Country Style Ribs
2 T garlic powder
1 7 oz. can of Salsa Verde (I use Embasa brand)

Put Pork in crockpot
Sprinkle with garlic powder
Sprinkle with Salsa Verde
Cook all day on high.
Shred

(if you want, you can take it out of the crockpot and stick it under the broiler for a bit to crisp it up)

Serve with tortillas, diced onion, and cilantro and/or any other accompaniments you like.

Salisbury steak

1lb.hamburger
1egg white, lightly beaten
1/3C.chopped onion
1/4C.saltine crumbs
2T.milk
1T.horseradis
1/4t.salt
1/8t.pepper
12oz.beef gravy(I make my own)
1 1/4-1 1/2C.sliced shrooms
2T.water
hot cooked noodles or rice

In bowl mix first eight ing. Shape into four oval patties. Fry in skillet over med. heat 10-12min.or until cooked through, turning once. Remove patties and keep warm. Add gravy, shrooms and water, heat 3-5min. serve over patties and noodles/rice. Serves 4



Hot beef Macaroni Salad

1C. uncooked macaroni
3/4lb.hamburger
1T.butter
1/4C.minced onion
1/2t.salt
1T.flour
1/2C.red wine
1/2C.chilisauce or catsup
1 Gr. pepper,diced
2t.worcestershire sauce
1 1/2C.shredded cheese
2C. shredded lettuce
sliced tomato

Cook macaroni.
Brown meat in butter, add onions,salt,flour.
Blend in wine. Stir in chili sauce, gr. pepperand worc. sauce
Bring to boil, remove from heat. Toss with macaroni. Fold in cheese, reserve some for garnish.
Line dish with shredded lettuce, mound salad ontop. Garnish with cheese, tomatoes. (I sometimes also use bl. olives and gr. onions)

Firecracker Casserole

2lbs.hamburger
1med.onion, chopped
15oz.can black beans, rinsed and drained(sometimes I make my own)
1-2T.chili powder
2-3t.cumin
1/2t salt
4 flour tortillas
1 can cr. shroom soup, undiluted
10oz.can rotel tomatoes and chilis, undrained
shredded cheese

In skillet cook beef and onion until meat is done, drain. Add beans, chili powder , cumin and salt. Put into a greased 13x9x2 baking dish. Arrange tortillas over top. Mix soupand tomatoes, pour over tortillas. Sprinkle with cheese. Bake uncovered 350* for 25-30min. Serves 8


Potluck pockets

1lb.hamburger
2T.worcestershire sauce
1t.cumin
2med tomatoes,diced
1/2C.onion, chopped
2T. soy sauce
1/2t.italian seasoning
1/2C. gr. pepper, chopped
2t. garlic powder
6 pitas, halved
3C. shredded lettuce

Sauce:
1/2C. soy sauce
2T. worcestershire sauce
1/2t.garlic powder
1/4C. vinegar
1/2t. onion powder
1/2t.italian seasoning
pepper

In skillet, brown beef, onion, gr. pepper, drain. Add worc., soy, garlic, cumin, it. seasoning, mix well. Simmer 5-10min.
In small pan bring sauce ing. to a boil. reduce heat, simmer 5-10min. Spoon meat into pitas, top with sauce, tomatoes, lettuce.

Beef Storganoff Sandwich

2lbs.hamburger
1/2C. chopped onion
1t.salt
1/2t.garlic powder
1/2t.pepper
1 loaf french bread
butter, softened
2C. sr. cream
2 tomatoes, seeded and diced
1 lg. gr. pepper, diced
3C. shredded cheedar cheese

In skillet brown beef and onion, drain. Add salt, garlic powder and pepper. Cut bread lengthwise in half, butter both halves and put on baking sheets. Remove meat from heat and stir in sr. cream. Spoon onto bread halves. Sprinkle with tomatoes, gr. peppers and cheese. Bake 350* for 20min. or until cheese is melted(bake longer for crispy bread).
slice and serve, 8-10 servings.


Cheeseburger soup

1/2lb. hamburger
3/4C.onion
3/4C.shredded carrot
3/4C.celery
1/4C. flour
1 1/2C. milk
1/4-1/2t.pepper
1t.basil
1t.parsley
4T.butter, divided
3C.chicken broth
4C. diced, peeled potatoes
8oz. velveeta
3/4t.salt
1/4C. sr. cream

Brown beef, drain, set aside. Saute onion, carrots, celery, basil, and parsley in 1T. butter until tender. Add broth, potatoes, and beef, bring to boil. Reduce heat, cover, simmer 10-12min., until potatoes are tender.
In small pan melt rest of butter. Add flour, cook and stir 3-5min. or until bubbly. Add to soup, bring to boil. Cook and stir 2 min. Reduce to low. Add cheese, milk, salt, pepper. Cook until cheese melts. Remove from heat. Blend in sr. cream.

Sometimes I will add chopped gr. pepper and jalapenos, or change the broth to beef.


Thyme for meatball soup

1 egg
1/4C. breadcrumbs
2T.thyme
1/2t.salt
1 1/2lbs hamburger
1 small onion, chopped
2 med.carrots,chopped
3/4lb. mushrooms, sliced
1T. oil
1 !/4lbs.red potatoes, cubed
29oz. beef broth
1 14 1/2oz can stewed tomatoes

In a bowl mix egg, breadcrumbs, half the thyme and salt. Mix in beef. Shape into 1" balls. In a soup pot, brown meatballs, drain, set aside.
In the same pot, saute onion, carrots and shrooms in oil until onion is tender. Stir in potatoes, broth, tomatoes, meatballs and rest of thyme. Bring to a boil, reduce heat, cover, simmer 25-30min. or until potatoes are tender. serves 12

Moosh

It is mashed potatoes- can be leftover, onions, cheese, butter, ham. That is the basic, you add whatever is around. Leftover, fresh whatever. I would change the veggies, cheeses, and meats.

It is a good comfort food, in fact I had leftover mashed potatoes and yesterday I made myself some moosh with onions, cheddar and ham.

Butterfly out a pork roast, stuff it with spinach, garlic, breadcrumbs, pancetta and parmesan, rolled, tied and roasted, served with green beans and roasted garlic mashed potatoes.

Holy Pokes
Form bread dough, which has risen once, into balls the size of large marbles. Let rise again until has doubled in volume. Slip dough balls into a kettle of fat heated to 360*F. and fry until a golden brown. Drain and serve with plenty of butter. Or serve with maple syrup, as a fritter.

Apple fritters
1 cup flour sifted
11/2 tsp baking powder
1/4 tsp salt
2/3 c milk
1 egg, beaten
3 lrg apples, peeled cored and sliced
2 tbs powdered sugar
1 tbs lemon juice
make batter by sifting togather, flour, baking powder and salt; add milk and egg and beat til smooth. Add sugar and lemon juice to apple slices; dip in batter and fry in deep fat (375*F.) until golden brown. Drain and sprinkle with powdered sugar. Serves 6

Maine Molasses Doughnuts
2 eggs
1 cup sugar
1/2 c molasses
1 cup sour milk (1 tbspoon lemon juice with 1 cup milk, stir, wait 5 mins)
1 tsp soda
4 cups flour (about)
1/4 tsp ground cloves
1/4 tsp ginger
1/8 tsp salt
1 tbsp melted lard
Beat eggs, add sugar and beat well, then add molasses and sour milk, to which has been added the soda, then the flour, mixed and sifted with the spices, and the last the melted shortening. Handle dough as little as possible. Roll out a few at a time and fry in deep hot fat (360*F.) Turn Frequently as they fry; drain Makes 36 doughnuts
