Basic pesto. It makes about 1 cup:

3 cups loosely packed fresh basil leaves
1 tsp salt
3 cloves garlic
1/4 cup pine nuts
3/4 cup olive oil
3/4 cup freshly grated Parmesan

Combine the basil, salt garlic, nuts and olive oil in food processor and process, scraping sides occasionally, until smooth.

Add the Parmesan just before using.

Lemon Chicken

Strip up the boneless breast meat, salt n' pepper, little splash of soy sauce, one heavy lemon rolled.. cut... and squeezed over the meat, a teaspoon of honey (or sugar), some cornstarch and some flour. Stir it all together until the meat is coated. Get the oil hot in a fryer or your deep fryer.. and cook until golden.

This version is much less sticky and sweet ...more savory and lemony, if that makes sense.

I still served it with steamed brown Jasmine rice and green beans with mushrooms, onions and garlic sauteed in EVOO with some sea salt.

Took large boneless, skinless chicken breast and placed each on it's own piece of foil so I can make a pouch out of them. Sprinkle with powders fajita seasoning, fresh chopped garlic a couple of large pats of butter and two slices of jalapeno pepper. Fold up into a pouch and bake about 30 minutes on 350 degrees. Serve with a fress tossed salad and black bean and corn salsa. YUMMMM!!!!
I should add that you need to use a fairly liberal amount of the fajita seasoning for it to be good.

Use for left over chicken or turkey...
I throw my left overs in a cast iron pan (going to take a lot of abuse). Fry the meat in a little bit of oil until some of it is crispy and the meat is falling apart, like pull pork. You'll end up with like a thick layer of chicken/oil on the bottom of the pan (needs to be scraped). When you think you are close to being done, toss in your spices, onions, mushrooms etc. You might have to add more oil or butter as you cook. After they cooked down a bit, to the way you like them, mix in 1 – 2 TBS of flour and stir till it thickens. After the mixer sort of starts bubbling, but not burning, add water, stirring as you add the water. When the gravy starts bubbling turn the heat down and add mixed veggies. I'll put this over rice, bread, potatoes or pasta.

Spaghetti pie ! LOL

Just spaghetti and ground beef, with a cheesy white sauce popped in a baking dish with cheese sprinkled on top and baked till melted.

Decided that tonight will be Gougere:
1C. milk
4T.butter
1/2t.salt
1/2t.pepper
pinch nutmeg
3/4+2T.flour
4 eggs, room temp
4oz.parm cheese, room temp
1C.ham, chopped
1egg, beaten with 1t.water
2T.parm. cheese
Grease 9" piepan. Put milk, butter, salt, pepper and nutmeg in lg. heavy pan. Cook over med. heat, stir often until butter has melted and boils. Remove from heat, add flour all at once, stir with wooden spoon. Return to heat, stir vigorously and constantly for 2-3min. until it comes away from side of pan. Remove from heat. Beat in eggs, 1 at a time into hot dough, stir vigorously after each egg until fully mixed and dough is smooth. Beat in parmesan cheese. Fold in ham. Put dough in piepan. Brush with egg-water mixture, sprinkle with parm.Bake 50min. at 375* DON"T OPEN OVEN DOOR! Gougere should be quite brown and puffy. While still in oven, make a few slits in top with sharp knife. Bake 10min. more. Serve hot, room temp or cold. 4-6 servings

I take about 6 lamb kidneys and snip off the ureters very close to where they begin, wash the kidneys well and then chop each one in about 6 to 8 pieces. Cut up a large onion ..yellow or red... and a big green bell pepper, roughly in the same size chunks as the kidneys or slightly smaller. Mince a couple cloves of garlic. Optional: chop up a jalapeno ..small pieces, so you don't get a mouthful of fire. Add your typical "mexican" seasonings... fresh or dry.. coriander, cumin, chili powder, oregano, thyme, salt and pepper, etc. ...or cheat and use a fajita seasoning package or even a taco seasoning package. I prefer it from scratch, but I have been known to rush and cheat, too.

Get a sauce pan and add a T. of oil.. heat it up... add kidneys, onions, pepper/s, garlic and cook high and fast for a couple or three minutes ...then turn it down, add the seasonings and a little water. Stir this, cover it and let it simmer for half hour or so. It doesn't take long for the kidneys to get done ..and you don't want to eat rubber kidneys.

Serve with your traditional sides ...spanish rice, beans, salad and fresh tortillas or gorditas, etc. I usually eat mine rolled up in a fresh gordita, but they can be consumed however you choose.

Vegetarian Cheesy Ranch Burger, Hamburger Helper box:


1. Brown ground beef(vegetarian style) in 10-inch skillet(the kind of vegetarian burger crumbles we buy are already ground up)

2. Stir in hot water, milk(we used soy milk) sauce mix(which comes with box) and uncooked pasta. Heat to boiling, stirring occasionally.

3. Reduced heat; cover and simmer about 14 minutes, stirring occasionally, until pasta is tender(sauce will thicken as it stands)

4. Remove from heat. Stir mayonnaise into mixture(OPTIONAL!)


That's what it says directly from the box(except it doesn't say OPTIONAL with the mayo, I just added that because I never saw my mom put that in it.


You can add stuff for toppings, too! example: 1 cup(4 oz.) shredded cheese(and if you want to cut down on fat/cholesterol, use low fat Kraft cheese.)

Last night I high heat roasted a big turkey wing: cut off the wing tip, seasoned the rest with P. Prudhomme's Poultry Seasoning and Adobo seasoning, browned it in a little oil in a cast iron skillet, then baked at 425 for about 30 minutes. Oh my word, it was delicious! The wing is my favorite part of a turkey anyway - so I'll be buying more wings! Oh, and some steamed broccoli for a veg.

My favorite way to use up eggs.

This time I used pork sausage meat, rolled into little balls and cooked, eggs scrambled and half cooked in micro.
meat in caserole dish, pour egg mix on top - top with fresh shredded cheese a few shakes of salt - pop in the oven at around 350 till done.
I add pepper afterwards as my kids are picky, so I get pepper they don't.

In the past I've used different kinds of meat - whatever I had on hand works.
