I think my GF issues take a few days....? to show up? My reaction is INTENSE itching on my shins. Like get a brillo pad and take off the skin, because it itches all the way down to the bone. Even though I now avoid gluten, I will occassionally get a reaction. So I don't know if there is something else or if I'm getting gluten somehow that I don't know about.

If it's something else, well, crap, how to figure it out. If it isn't gluten... oh, man, I'd love to have a chewy crusted pizza!

I'd take everything down to the bare knuckles. Eat a base meal of baked chicken breasts, baked potato (no butter) and veggie such as green beans or asparagus, plain, once again.

Matron of Honor at my husband and my wedding developed food allergies. That is all she could eat so I would start there and then slowly start adding things one at a time and note any side effects. Funny. Those are foods that I can eat that don't cause me a lot of pain, inflammation and discomfort so that is about all I eat.

I hear ya. I made a load of Christmas cookies. First time in years. Discovered really fast that while I was hungry for them, I only had one or two types I could eat without getting sick. Funny enough, I could eat fudge without it bothering me. Go figure. I wish I could understand my digestive track. Tried, failed, gave up. I stick with what I can eat and try to stay away from temptation....well as far as food is concerned.

I would recommend...

Cut out "everything" until you are on a very plain and simple diet.

Stay on the simple diet until you are 100% "good"


Then introduce 1 thing. But a bunch of "it", breakfast lunch and dinner.

I hate subtle.

So, this way, it is CLEAR if you have a reaction or not.

Stay like that, for at least 3 days, if not a full week.

Next week, introduce the second thing.


Again, huge amounts of the introduced item. If your reaction is potentially severe, ease into it... but work up to the New item in every meal. Lots!


Yes, it Is SLOW, especially if you have cut out many things.

But, being able to know without a doubt, exactly what you have issues with, is great.
 
Trust me @Alaskan, baked chicken breasts plain baked potatoes and green beans are about as simple as it gets. It's so simple that I look at my plate and whimper. It's so simple that if you look up simple diet in the dictionary you will find a picture of my dinner last night.

I can't eat out. Friend contacted me last month and wanted us to go out to eat with her. I had to decline. Food sensitivities bite. And you are right, narrowing down the field to find what is causing you problems is a slow and painful process. For me, even small servings can cause me reactions.

When I read 'huge amounts' I shuddered inside because I could just imagine what my guts would do with a huge amount of any food that my digestive tract is sensitive to.

But yeah, you don't want to add too much at any one time so you don't know which food is causing your problems. One at a time and no more till you are sure one way or another.

When I complained to my doctor about my diet, he didn't sympathize with me. He just said. Yes, but your labs are good, you are feeling good and that is all that matters.

He's right. Can't argue with that.
 
Wanted to add. @sallyPB mentioned that her symptoms were intense itching on her shins. Normal servings for her may be better than loading up on anything.

Itching is too close to hives for my liking and hives are too close to anaphylaxis to risk really loading up on anything and risk pushing an allergy over the top into something worse.

Agreed... but once no symptoms show up with small doses, I do think you then need to increase the dose... and keep up large doses for several days.

Because, some times a small dose is fine for your body... but if you have the bad "thing" multiple days in a row, and at high doses... then finally a reaction is triggered.

And if you don't know that that is what happens... then you end up with terrible reactions just popping up out of the blue. And then you have no idea that if you have X 2 times a week you are fine, but 4 times in the same week and you get a terrible reaction.

Any way you slice it.... lots of work.
 
I spent all day yesterday deep cleaning the house. This morning I did some touch ups in various areas, which was mostly putting up the clutter, and cleaning where the clutter had been. Now, I can take a breather.

Tonight I will bake the pies, and prep the turkey so it will be ready to pop in the oven first thing in the morning.
