I suppose if you keep opening it weekly anaerobic bacteria isn't an issue. I've got some of those, even in a few sizes. In fact, that's what I used the last time I tried something similar, just don't leave it in your fridge for half a year, because I tell you, it gets a bit suspicious. It seems I have manage to capture some wild yeast in my starter, the dough I put together 5 hours ago has started rising. I'm going to try and make a rosemary bread in the morning, this time with a bit more rosemary in it. I hope the wild yeast will behave in the same way as dried yeast, because I really like making the no knead bread. It makes virtually no mess compared to the regular stuff that you need a flowered surface for and everything. I still need to up the time I preheat my pot though, because I still haven't gotten it to sizzle when I pour in the dough.
It is common for the starter to take some time to get a good punch. If the bread tastes sour then there is lacto bacillus in it. Plain yogurt still has lacto bacillus so if it does not taste sour try that. Adding baking yeast will not work since baking yeast will not live in a starter. Potato flour is a good thing to use in the starter as well as in the bread. Just a table spoon or so. Also, it is a good idea to use milk instead of water when feeding the starter every once in a while.

Only use luke warm water--85 Degrees F.
 
I'm sort of trying to maintain this wild yeast, so I won't play with dairy products yet. If I don't like the taste, I might try some yoghurt in it or something. Maybe buttermilk. The one I tried earlier was dairy and rye based, but that didn't work out. The bacteria we have in these parts is supposedly exceptionally beneficial for rye bread, which is eaten a lot in Finland:


Here's an image of Finnish rye bread, stolen from selaa.fi. These are made with virtually no wheat in them, just rye. I think there's a Finnish bakery in New York that makes a similar product, it's been pretty popular.

But I'm more interested in making light bread, because our local store doesn't really carry that many light breads that I like. Their selection of rye is good though. What I want, is something more Mediterranean resembling. At some point I'm going to try a malt and syrup based bread too. Black bread is something that's made in the archipelago of Finland. It's a bread that stores for long, and it's really tasty. Loads of malt and sugarbeat syrup in it.

For those who don't aren't GF, there's a feature you can get called "Ad Blocker.:" It puts a tiny symbol on my tool bar telling me how many ads it is blocking (4 at the moment). I didn't mind the static ones on the sides, but the ones that pop up or start playing if you accidentally scroll over them drove me up the wall!

If you are using Google Chrome you can go into settings and turn off those annoying videos that keep driving us all crazy! I did! I turned them off in Face Book but it works on here and other sites as well.


For Facebook on the desktop, you can turn off auto-play videos in your settings:
  1. On Facebook, head to the drop-down menu in the upper right-hand corner and go to Settings > Videos.
  2. Next to the Auto-Play Videos setting, click the "On" box and change it to "Off."
