We do a big pot of Lima Beans and ham hocks for Christmas... and Cornbread.... Or a Ham....Not something we celebrate, bama. And for Christmas we eat ham, like it's supposed to be done.

Oh I love that jellied cranberry sauce.... Whip that into a little vodka... oops I digress. Thank goodnes I LIVE with my wierd relatives....Thanksgiving is 1 of my favorite days. You should really look into importing it....it has been a long tradition in my family to cook a ham and a turkey for both thanksgiving and Christmas. We have cornbread dressin, dumplins, tater salad, english peas, devilled eggs, brown and serve rolls, and that weired canned cranberry sauce. The only bad thing about thanksgiving is having to hang out with weired relatives
I am going to try a boned stuffed Turkey this Thanksgiving... With roasted bones to make the gravy... Oh and instead of mashed potatoes.... Doing those finger potatoes I did for my sons Birthday.... EVERYONE ... all three of them... raved over them. I thought they were pretty good too...I'm thinking maybe duck for both thanksgiving and x-mas.

Appetizer for lunch.
Ceviche.
Organic home grown Roma tomatoes, green onions, red onion, white onion, Serrano chilies, sea salt, peppercorns, diced raw turbot and scallops marinated overnight in lime juice.
I prefer sea bass (corvina), but in the middle of the country one can't argue with any firm white non-oily sushi grade fish.
I think I had too much vegetation in relation to fish but it is delicious.
