Why @getaclue I thought you ALWAYS had that badge! Seriously, you are like that next door neighbor I wished I had who shows up at the back door with a tray of brownies and sits at the table and talks with me over cups of coffee to go along with those brownies!

Sincere congratulations! I didn't even know about mine till I logged in and checked my Alerts. My response was "Whaaaaaaaaaat? Man I gotta check in more often!"
 
@ronott1 I haven't tried the ground flax seeds but I do use concentrated flax seed oil capsules for inflammation along with cholesterol control.

Are the ground flax seeds better than the oil?
Not necessarily better but different way of working.
Don't take oil supplements along with the flax powder. Taking it at night works because the powder moves down to the lower intestines and does good things down there.

Flax powder is also good for diabetes--which can go along with high cholesterol since both are really a metabolism issue
 
micro, Thank you! I got it the same time you did. I LOVE brownies, and cups of coffee. Would gladly bring some over, and make you put on the coffee pot, so we could enjoy.

Bean tricks:
Soak overnight and rinse
Cook with salt or the beans can fall apart
Get a real smoked ham shank
A cool trick is to use smoked pork neck bones

Likely the creamy texture came from either a ham shank or from the old trick of adding a bit of bacon grease to the beans. Old timers kept a bowl of bacon grease next to the stove for this purpose....It was a great thing to do!

My dad would have used bacon grease in a heart beat but not mom she was from the north and she hated the grease that my dad's family put in their food. lol
Dad's family was from Alabama.
When I met my dh he had a jar of bacon grease on the stove. :lau
My mom always soaked her beans over night.

I think I saw it at the local Amish general store. If they don't have the powder, I know they have flax seeds. I can always powder them with my mortar and pestle if the need arises. Thanks for the tip!
 
I never soak my beans overnight, but I add an ingredient that most people don't know to add. Fix a pot of beans like you normally would, adding salt to the water. When the beans get to boiling, add a heaping 1/8 th. of a tsp. of baking soda to the water. Make sure the water has boiled down a little, because it's going to foam up. You won't taste it in the beans after they've cooked, it neutralizes some of the acid making the beans easier to cook tender more quickly, it helps keep them intact, so they don't turn to mush, and it reduces flatulence after they are eaten.
